Delicious High Pro Vegan Friendly Waffles

This weekend I fancied something a little different for breakfast, feeling a little bored of oatmeal I had a little think of alternatives and came up with… waffles! These wouldn’t just be plain old sugar and fat laden waffles though, I wanted a delicious yet nutritious alternative to curb my early morning and set me up for the day… here’s what I came up with:

Vegan Friendly Waffles

First I blended up about 50g of oats into a flour like consistency, then added in a bit of cocoa power, some flaxseeds, a little gluten free flour (around 25g) and the magic ingredient a scoop of chocolate caramel High Pro and turned up the blender again. Once all the dry ingredients were thoroughly mixed I added in around 250ml of almond milk, 2-3 teaspoons of apple sauce, some vanilla extract and a pinch of cinnamon. I didn’t measure out all the ingredients exactly but just made sure I got it to the point of being fairly thin and runny so that I’d get lovely crispy waffles.

After resurrecting the waffle iron from the back of the kitchen cupboards I dusted it off and heated it up to a medium-high heat. Once hot I sprayed it liberally with some fry-light and added in the first batch of my mixture. It took a little trial and error to work out how long you need to cook it for but I reckon about 5 minutes. I got 4 beautiful, crispy waffles out of the batter I made (they might look a little dark but it’s just the cocoa in there, they shouldn’t be burnt after 5mins!) then I topped them with berries, half a banana and a little honey to serve, delicious!

Definitely think I’m on to something good here, try it out for yourselves and you’ll see what I mean! You get a perfect balance of breakfast nutrients with around 25g of protein, 50g of carbs and few grams of healthy fats too from the flaxseed. And let’s face it who wouldn’t want vegan friendly waffles every morning if they could?!
